Radish Salad with a twist!

Continuing on Season Specials, KetOntrack kitchen present an easy Spanish Salad Recipe using Radishes instead of Potato. It’s very refreshing, light on calories – high on vitamins and just perfect for a hot sunny day. Here’s how I prepared it. It is good for 2 Servings.

You need the following ingredients- usually available at home 😊

  • 8 medium sized radishes
  • 2 hard boiled eggs
  • 1 Spring onion
  • ½ Sliced Capsicum
  • 2 spoons of home-made Mayonnaise
  • 1 spoon of fresh lemon juice
  • 1 spoon Olive oil
  • Salt to taste
  • A pinch of freshly cracked black pepper
  • Chaat Masala (the popular Indian spice powder)-Optional
  • Sliced green chilli (add for that extra zing!) – Optional

PREPARATION

Dice radishes into quartered chunks.  Boil them for 15 minutes.

You could alternatively roast them in your oven (Spread the radishes out on a baking tray with a dash of olive oil, salt and pepper, roast at 350 degrees for around 20 minutes.

Meanwhile boil the eggs and cut them into quartered chunks. Finely cut the spring onions and slice the capsicum. You may add avacados, green olives to the salad contents. More the merrier !

Make the dressing by adding the mayonnaise, lemon juice, salt, pepper and olive oil. I added the tangy chaat masala and sliced chillis for that extra zing. Check out https://en.wikipedia.org/wiki/Chaat_masala

Stir in the dressing and toss your salad well. Cool it for two hours and enjoy !

You could easily store this salad for a week in your refrigerator just like a potato based salad.
