Spinach-mushroom “Frikase”
Hello everyone. This is a recipe i really like, especially when i am fed up with meat. Still for the meat lovers it can be done with beef or pork but that’s another recipe.
Ingredients
- 500 gr Mushrooms(a variety of them)
- 500 gr Spinach
- 1 small red onion
- 2 spring onions
- 2 garlic cloves
- 1 leek
- 1/4 cup coriander chopped
- 1/4 cup basil
- 1/4 cup drill
- 3 Tbsp olive oil or Ghee
- 1 tsp ginger powder or fresh
- 1 tsp turmeric
- salt/pepper to taste
- 1 lemon-juice
- optional: lemon-egg sauce

Preparation
In a big pan add the oil and the mushrooms. Stir occasionally and let them cook, some wild types of mushrooms need more time to cook. Finely chop the onions, the leek and the garlic. Add them to the pan and stir for 2-3 min. Then add the spinach and cook a few more minutes.Add the rest of the ingredients and remove from heat.
Optional
If you like a more rich taste instead of just adding the lemon juice try the “lemon-egg” sauce. Separate the egg white from the yolk. Beat the white until it forms a foam.Add the yolk. Beat a bit more and add the lemon juice. Add some of the liquid from the pan. Now add the sauce to the pan and with gentle circular movements let the sauce to be absorbed . Do not stir with a spatula.
We serve immediately.
