Asian “rice” with Cauliflower
I just really love Asian cuisine. Fried rice is my best choise so i found out that Cauliflower can replace the rice part. I tried it and ever since i make it often as a main course or a side dish. I hope you like it too.
Ingredients
- 1 small head Cauliflower about 250 gr.
- 1 small head Broccoli
- 6 medium Mushrooms sliced
- 1/2 Red pepper cut in cubes
- 1/2 green pepper cut in cubes
- 1/2 yellow pepper cut in cubes
- 1 small onion sliced
- 1 scallion sliced
- 1 tsp fresh ginger
- 1 tsp Turmeric ground
- 3 gloves garlic
- 2 medium eggs
- 1 tsp Chia seeds
- 1 tsp sesame seeds
- A choise of Protein( Chicken, Beef stripes, Shrimps, Fish)


Preparation
In a food processor put the cauliflower until it becomes like rice. Set aside.
In a non stick pan stir all the ingredients with some oil. If you use a Protein cook it first and then add the vegetables. When all are cooked add the Cauliflower “rice”. Stir a few more minutes. Make a hole in the middle of the pan and add the eggs. Cook them like scrabbled eggs and then mix them with the rest of the veggies.
Season to your taste and serve. Sprinkle with the seeds.
